I know a guy and a girl; they lie in the mead on this bright day. He goes now with her and he gives her a rose to show her that he loves her, he won´t lose her and he will have her in his heart from now on. The sweet time of year has come, and they look at the sky with the sun in the eye. Now he knows that death won´t win.

"in their eyes" would be better than "in he eye" and wouldn't break the rules. "Mead" doesn't work here (you're probably thinking of meadow, which of course is a forbidden two-syllable word), since mead is a drink made of honey, and you wouldn't want your lovers to float around in the favorite drink of the Viking gods, now would you?
